Specialkok - kantonesisk Siu Mei / kinesisk BBQ Magasasa driver flere kinesiske restauranter i København. Som en del af vores videre udvikling ønsker vi at etablere og udvikle et nyt område med fokus på traditionel kantonesisk Siu Mei. Vi søger derfor en erfaren specialkok, som har professionel erfaring specifikt med kantonesisk Siu Mei. Stillingen er ikke en almindelig kokkestilling, men kræver specialiseret erfaring med traditionelle kantonesiske stegeteknikker. Arbejdsopgaver • Produktion af traditionel kantonesisk Siu Mei, herunder helstegt and, Char Siu og sprødstegt svinekød • Ansvar for processen fra forberedelse til færdigt produkt • Sikring af ensartet kvalitet og høj standard • Bidrage til udvikling og standardisering af vores nye Siu Mei-produktlinje • Overholdelse af gældende krav til fødevaresikkerhed og køkkenhygiejne Kvalifikationer • Minimum 3 års dokumenterbar professionel erfaring med kantonesisk Siu Mei / kinesisk BBQ • Erfaring med selvstændig produktion af helstegt and, Char Siu og sprødstegt svinekød • Kendskab til traditionelle kantonesiske tilberedningsmetoder og professionelt Siu Mei-udstyr • Selvstændig, kvalitetsbevidst og ansvarlig Vi tilbyder en mulighed for at blive en del af Magasasas næste udviklingsfase og være med til at opbygge vores nye kantonesiske Siu Mei-koncept. As part of our next stage of development, we are establishing a new specialised area focusing on traditional Cantonese Siu Mei. We are looking for an experienced specialist chef with professional experience specifically in Cantonese Siu Mei. This is not a general chef position and requires specialised knowledge of traditional Cantonese roasting techniques. Responsibilities • Production of traditional Cantonese Siu Mei, including whole roast duck, Char Siu and crispy roast pork • Managing the production process from preparation to finished product • Maintaining consistent quality and high production standards • Contributing to the development and standardisation of our new Siu Mei product line • Maintaining professional food safety and kitchen hygiene standards Qualifications • Minimum 3 years of documented professional experience in Cantonese Siu Mei / Chinese BBQ • Experience independently producing whole roast duck, Char Siu and crispy roast pork • Knowledge of traditional Cantonese preparation techniques and professional Siu Mei equipment • Ability to work independently with a strong focus on quality and consistency We offer an opportunity to take part in Magasasa’s next stage of development and help establish our new Cantonese Siu Mei concept.
